At some point you probably said to yourself, “I should really try to be healthier,” but had no idea where to start. I was that person, actually worse because I thought I knew what I needed to do to be healthy, but I was all wrong. I had it in my head that I needed to cut calories and cut fat out of my diet to lose weight. While that can work it isn’t a sustainable way to live. What I’ve learned since starting the vitality program is that it isn’t necessarily how much you eat, but it is the type of foods you eat that can really mess with your health.
After taking all the data from my first two appointments the doctors determined that I should be on a low sugar and low carb diet because of my blood sugar. I also need to eat more protein. Since I’ve changed my diet I’ve felt so much better. One thing I haven’t talked about much is that I have had fewer and less severe headaches. This is a huge benefit to me as a migraine sufferer. This makes me want to fully embrace this new eating style. I’ve found a bunch of new yummy recipes. I thought I’d share one of them with you.
Cheeseburger Soup
1 pound of lean ground beef
8oz cream cheese
1 can diced tomatoes
4 cups chicken broth
1 onion diced
1 pound bacon
1 cup shredded cheddar cheese
Instructions:
In a large pot brown the hamburger season with salt and pepper. Once hamburger is browned drain fat. Add onion and cook until translucent. Add cream cheese to the hamburger and stir until coated and melted down. Add diced tomatoes and chicken broth, bring to a boil and let simmer for 15 minutes. Cook bacon. Put soup in serving bowls and top with crumbled cooked bacon and cheddar cheese.
Now this may not be the best thing if you have high cholesterol, but it sure is yummy.
